Happy bloggiversary and something free for you!

...well something free for one of you anyway.

I realized the other day that this past February marks two joyful years of blogging. I love having a place to store photos, memories, and the occasional random thought. Of course, getting a comment here and there is the icing on the cake.

To show my appreciation, I've got a little something for one of you... Jelly Bellies! For some reason, whenever I log into my blog, I get a sudden inexplicable craving for these tasty little buggers. If you live close, I will hand deliver them, If you live far, I will mail them. But, there won't be as many because I'm to cheap to pay mega bucks for shipping.

How do you win, you ask? Is there a catch? Do you need to tweet about my giveaway or post about it on your blog? Well that would be just silly because spreading the word about the contest would only decrease your chances of winning. And really, for all that work you could just go to the store and buy some anyway. And I don't need random weirdo-pervert stalkers wandering around my blog.

But yes, there is a catch. To enter, you must leave a comment that includes your all-time favorite recipe in it. And go easy on the dessert recipes because my thighs are proof enough that I have ample access to desserts already. And if you are lazy like me, you can just link your favorite recipe, because to be honest, half of mine are from allrecipes anyway.

And if you lose, don't be sad. At least you will have access to a few new recipes. See, everybody wins!

Polynesian Sausage Supper

1 lb fully cooked smoked sausage, cut in ½ in slices
1 med onion, chopped
1 med green pepper cut in 1 inch chunks
1 can (14 ½ oz) diced tomatoes, undrained
½ cup beef broth
1 tbsp brown sugar
¼ tsp garlic powder
¼ tsp pepper
1 can (20 oz) unsweetened pineapple chunks
2 tbsp corn starch
Hot cooked rice

In a large skillet, cook the sausage, onion and green pepper until sausage is lightly browned; drain. Add tomatoes, broth, brown sugar, garlic powder and pepper. Drain pineapple, reserving juice. Stir pineapple into sausage mixture. Bring to a boil; cook uncovered for 5 minutes.

Combine cornstarch and reserved pineapple juice until smooth; gradually add to sausage mixture. Bring to a boil, stirring constantly; cook and stir for 2 minutes, or until thickened.
Serve over rice.

It's my favorite Sunday recipe. I easily mix it together before I leave for church. Set the oven timer and come back hungry to dinner all ready. We top this with sour cream, avocados & salsa. We dip with chips too. Yummmy!

This is our current favorite recipe - the best part is that it literally takes less than 10 minutes to throw together. On top of that, it is extremely low sodium, and quite tasty!

I love this idea! :) What a great way to share recipes! OK - my recipe is super easy - it's called Catalina Chicken. BBQ 4 chicken breasts for 15 on each side - after seasoning them with salt, pepper and chili pepper. After the chicken is cooked, cut it up into smaller peices (actually, you don't have to - but I like to cut it up because I like as much flavor on my chicken as possible) and then put it into a bbq safe aluminum pan. Cover the chicken with a bottle of catalina dressing and cook for an additional 30 min by placing the pan directly on the BBQ. I like to serve it with rice. SUPER YUMMY!!!

Hey - btw - you said in an earlier post that if my blog is not listed on your blog, then you don't read it. Mine isn't super exciting, but I love my friends to share my blog if you are ever interested. :)

Ok, I could put dessert recipes, but that would be too easy - I've been making my mom's meatballs lately, so that one's fresh in my head (they're made by Liz, so you know they're good!)

1 1/4 lbs. ground beef
2 slices white bread
1 egg
1/4 cup milk
Seasoned Pepper
Salt

Crumb the bread - this takes a while, but best to do it by hand. Mix beef, bread, egg, milk, salt & pepper. Make cake ball sized meat balls. Heat up some oil in a pan, medium-high heat, on the stove, and fit in as many meatballs as you can. Cook both sides for a few minutes, until brown - it's ok to be still a bit pink in the middle. Put all the meatballs in one jar of Paul Newman's Sockarooni Spaghetti Sauce because it's the bomb diggity. Simmer on low for about 20 - 30 minutes, then serve over spaghetti noodles. They're delish!

I'm home all next week, so you can should choose me so you can hand deliver it to Woodinville while I'm with my mom! Just sayin...

My new favorite recipe:

Cream Cheese Enchiladas (I used Mango Salsa and mmmm it was good and easy)

Boil 2-3 chicken breast, then cut in cubes or shred. Add 8-16 oz cream cheese and salsa to taste. It is easier if you warm the cream cheese for a few seconds in the microwave before mixing.

Scoop mixture into tortilla shells (microwave tortilla for 20 seconds so they are pliable).

Put in casserole dish. (Spray casserole dish and add thin layer of milk beforehand). Brush the tops of shells with milk. Cover and bake @ 350F for 25 mins. Add mozzarella or cheddar cheese and bake for 5 mins.

Put on bed of lettuce and add more salsa if desired

Peanut Butter & Jelly Cereal

Ingredients
• One box of Peanut Butter Cap'n Crunch
• One box of Cap'n Crunch With Crunch Berries
• One container of rice milk

Directions
1) Pour the box of Cap'n Crunch With Crunch Berries into a large bowl.
2) Sort all of the Crunch Berries into a separate bowl.
3) Mix the Crunch Berries in with the Peanut Butter Cap'n Crunch.
4) Pour a desired amount of the new cereal into a bowl.
5) Add your desired amount of rice milk.
6) Thank me later.

My favorite recipe changes quite frequently. As of late its my veggie sandwich.

2 slices whole wheat bread (preferably great harvest or homemade)
thinly sliced red onion, cucumber, tomato, lettuce, and avocado.

For the spread use:
1 Tbsp Mayo mixed with 1 Tbsp apricot preserves and 1 tsp dill.
I also like to salt and pepper the tomato.

Delish!

My favorite side to go with right now is the yummy sweet potato fries I found in the Costco frozen section. They are fab.
